Chicken is a great mid-week meal pleaser for the family and just needs 20-25 mins in a preheated oven at 180C.
We have five fast ways for you to get great flavour. If you have time to prep in advance, marinating for a few days will really give you much more flavour too.
Mix the juice of 1 lime with 2 teaspoons fish sauce; ½ teaspoon sugar; 1-2 red chillies, deseeded and finely chopped; and 1 tablespoon sambal oeleck (available from our Asian shelf). Mix well and pour over chicken breast. Bake and serve on rice with steamed green beans.
Mix 2 tablespoons hoisin sauce with 1 cm piece grated ginger and 1 clove garlic; ½ teaspoon Chinese five spice; and 1-2 tablespoons soy sauce. Mix well and pour over chicken breast. Bake and serve on mixed grain rice with stir-fried slender stems.
To any Culley’s new spice packet, add 1 teaspoon cooking oil; 3-4 small fresh tomatoes, quartered; salt and pepper; and ½ bunch fresh coriander, chopped well. Mix well, pour over chicken and bake. Serve with wraps, sour cream and salad leaves.
Mix 4-5 anchovies and some of the oil with the juice of 3 lemons; 2 garlic cloves, peeled and finely chopped; salt and pepper; and a small bunch of oregano, chopped well. Mix well before smearing over the chicken . Bake with 10-12 green olives and serve with salad leaves.
Chop one chorizo into thin slices, add ½ teaspoon smoked sweet paprika; salt and pepper; ½ teaspoon honey; 1 teaspoon capers; and half a bunch of fresh thyme. Mix well with the chicken and bake. Serve with finely shaved fennel and cabbage salad.
