For March we celebrate Besaha, our producer of the month. Originally from Morocco, Besaha founder, Soufiane Et Tijani grew up in a family and culture where food is a source of celebration and brings families together.
Combining his background in hospitality and a passion for cooking he’s had from a young age, he’s created a range of high-quality Moroccan and Mediterranean foods to share.
Established in September 2015, Besaha initially started out with a range of spices (which are a staple ingredient in Moroccan and Mediterranean kitchens) couscous blends and Ghriba, which is a gluten-free Moroccan biscuit. “Our focus is always on authenticity and quality. Many of our products are more labour- intensive to produce, but the difference can be tasted in the final product,” Soufiane says. “Our philosophy is to create foods and kitchen provisions that showcase this region’s cuisine. Moroccan fare is a blend of Berber, Arabic, Andalusian and French influences – so it’s a celebration of the cultures, history and people.”
The traditional cocoa and sesame Ghriba biscuits are a well-loved treat in Morocco, often enjoyed at celebrations and family gatherings. There are many varieties, but Besaha’s are vegan, gluten-free and dairy-free, so just perfect as an after dinner treat or with a nice espresso!
Besaha couscous blends are all-natural and ideal for when you need to prepare a quick and easy family dinner. Serve with a cut of your favourite meat or a fresh green salad and you’ll have a delicious dinner on the table in 20 minutes.
The spices are roasted and ground separately, then blended. The benefit to this is that you get the full flavour of the spices’ intensity and balanced flavours. Besaha’s Chermoula, Ras el Hanout, Moroccan BBQ and Za’atar are absolute pantry essentials for easy summer-time cooking, so grab them next.
