FRESH FROM THE DELI: SALAMI

Simultaneously spicy, chewy, and sweet, this cured sausage that is one of our favorites! Salami is a complex and dynamic catergory of meat, that takes a huge amount of skill to get right, but done well gives you some truly amazing flavours…

Simply meat, salt and in some cases herbs or wine forced into natural animal casing, heat and time do the job to break down bacteria and ‘cook’ the meat. Moulds are used to assist in fermentation on the exterior of the salami itself and this causes further mould growth to take place when temperatures are just right.  Cooking or smoking of the meat prior assists in giving more developed flavours to the meat before it is allowed to ferment and mature.

We have a great variety of both naturally and more commercially produced salamis at Farro to choose from, all of which we also enjoy thanks to their unique tastes. We are also very lucky to have some beautiful naturally cured meats made right here in New Zealand to choose from.
