FROM THE BUTCHERY: FILLET MIGNON

Our cut of the month is a classic-Fillet Mignon. So French and so easy these very fast cooking cuts are taken from the centre of the tenderloin. Cut generally about 3 to 3 cm thick they fit nicely into a baguette with tarragon mustard or make your own hand cut frites to serve alongside.
