A simple and light batter is best to showcase the whitebait themselves so don’t get fancy and complicate things
Whisk together egg, cornflour, baking powder salt and pepper. Add whitebait and mix gently.
Coat a frying pan with butter and ladle in a spoonful of batter .
Flip the fritter when it is beginning to brown being careful not to overcook it as it will become tough.
Squeeze a little lemon juice on the fritter while it is still hot in the pan and serve with more lemon slices.

1 lemon cut into wedges to serve
