BEEF KOFTA WITH WHITE BEAN SALAD AND TAHINI DRESSING

These spice-packed beef kofta on a tasty bed of beans couldn’t be easier to make.

Prep: 25 minutes
Cook Time: 10 minutes
Serves: 5

Method

For the tahini sauce:
Blitz all the ingredients together in a blender to make a smooth paste, thinning if necessary with extra water.

For the white bean salad
In a bowl, sprinkle onion with some sea salt and the red wine vinegar and allow to soften for at least 15 mins. When ready to serve, add the remaining ingredients, and season to taste.

For the beef kofta:
In a food processor, blitz the onion, garlic and coriander. Add the spices, tomato paste, salt and beef mince. Pulse to combine, then add the egg white and pulse again. Shape into meatballs or oval shapes.
