EVE’S PUDDING

This delicious traditional British pudding is something you may not have eaten in years, but it is worthy of a revisit. Simply serve with custard for the best winter comfort eating.

Serves: 6

Method

Pre-heat oven to 180°C.

Grease a large baking dish, about 2.5 to 3-litre capacity, with 25g of the butter. Add sliced apple and scatter raisins over them.

In a medium-sized mixing bowl, add remaining butter and soft brown sugar. Using a hand-held mixer, beat together until pale and sugar starts to dissolve, about 5-10 mins. Add eggs one at a time, beating to just combined with each addition. Add flour and carefully fold in with a large spoon until combined.

Pour batter over the apples and gently shake the baking dish to flatten the batter.

Place in pre-heated oven for 45 mins or until golden.

Spoon into serving bowls along with plenty of custard.

200g unsalted butter
5-6 Granny Smith apples, peeled, cored, finely sliced
140g raisins
100g soft brown sugar 4 eggs
200g self-raising flour
