Lamb makes delicious, juicy patties and, with the sharp spike of preserved lemon, these are delectable.
Heat oil and fry onion until soft. Add garlic, chilli, cumin and sweet paprika and cook for another minute. Set aside in a bowl.
When cool, add in and combine lamb, oregano, preserved lemon and salt. Shape into patties. Fry for 4 mins on each side or until done.
Serve in a burger with tzatziki, lettuce and tomato.

500g lamb mince
