PLUM JAM AND ALMOND FRIANDS

These classic French sweet treats are perfect with an afternoon cuppa; toppings can be added to the friands prior to baking. Some of our favourites are Te Mata Just Fig Preserve with sliced almonds; Peplers’ Black Doris Plum Jam with smashed pistachio; or even San Ignacio’s Dulce de Leche with coconut thread, but there are so many flavour choices, the sky really is the limit.

Method

7 eggs, whites only
130 grams plain flour
140 grams ground almond
200 grams unsalted butter, melted
1 teaspoon vanilla extract
260 grams icing sugar, sifted
12 x 1⁄4-teaspoons Peplers black doris plum jam
10 grams pistachio nuts, smashed
