This delicious slow cook is something everyone can appreciate. The chicken meat just falls off the bone and with chorizo added there is so much texture!
Preheat oven to 180C.
In a deep fry pan heat a little oil and brown the onions.
Add the chopped carrot, celery and chorizo and brown well.
Add the chicken drums and brown on all sides.
Add the paprika and 2 cups of water, mixing well, and finally the chickpeas. Bring to a boil. Transfer to a casserole dish, cover and place in a preheated oven for 35 minutes.
Remove the lid and allow the juices to reduce before serving.
Sprinkle over the freshly chopped Italian parsley and serve immediately.
1 Red Onion peeled and sliced
2 cloves of garlic peeled and crushed
1 Carrot peeled and diced
1 stick Celery diced
1 pack Monte Nevado chorizo sausage sliced
1 pack Fermier chicken drumsticks
1 tablespoon Smoked Paprika
1 tin chickpeas rinsed well
1 bunch Italian parsley chopped well
