Farro’s own pesto stuffed turkey breast wrapped in prosciutto and served with roasted new season potatoes. As the mignons come frozen ensure they are defrosted in the fridge over night prior to cooking.
Preheat oven to 180C.
Wash and scrub the potatoes as required. Place in a roasting tray and add a little cooking oil, salt and pepper and place in oven.
Remove the turkey mignons from the packaging and discard and place the tray in the preheated oven. Roast for 20-25 minutes.
Remove the potatoes from the oven and place on a plate top with a handful of rocket leaves and finally place the cooked mignon on top.
Serve with additional rocket leaves on the side.
1 pack Farro turkey mignons, defrosted
8 new potatoes (if available or 8 gourmet potatoes)

1 box Farro rocket leaves
