New season spicy apple crumble

Apples have started their new season and sales are in full swing. We popped out to our friends at La Ronde orchard to see what this season’s apples are looking like. Although they are so juicy and crunchy fresh, the cooking varieties are also delicious in this tasty dessert.
Cook time: 25minutes
5 new season apples such as Gala or Granny Smith, washed and cut into 2 cm pieces
2/3 cup sugar
1½ tablespoons cornstarch
¾ teaspoon vanilla extract
1 cup rolled oats
½ cup flour
¼ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 teaspoon ground ginger
½ teaspoon ground cardamom
200g unsalted butter, softened
Preheat oven to 220C and position the rack in the middle.
Stir together apples, 1/3 cup of the sugar, cornstarch and vanilla and place in a buttered, shallow baking dish.
In a bowl stir together oats, flour, salt, spices and remaining 2/3 cup sugar.
Blend in butter with your fingertips until mixture forms small clumps.
Scatter over apples and bake until juices are bubbling and topping is golden brown, about 25 mins.
Cool slightly before serving with your favourite ice-cream.
